some new additions

the new trailer....looking good..















and the new cook line taking shape..

















and a new fleet additions.......she's a beaut!

stuff....

hey all...

so first of all, a big thanks to the people of west seattle, west seattle blog, and lora and the hotwire crew...Was a busy day...

so what is happening this week...well we should be finishing up the second trailer (nice work parker, justin and crew)..the hood just went in and we are now finishing wiring/equipment install etc. It is pretty exciting and she is going to be beautiful.

the walk up window is in the final stages of the processes with the HD, so that is good..i am hoping for approval this week, but we will see.

bacon jam...still searching for a USDA kitchen..just very difficult and I am not sure where to go from here..but will keep on trying to find the kitchen needed for getting bacon jam to the world.

and food cravings for the coming weeks...crispy fried chicken with apple celeriac slaw/ water chestnut, plum sauce, galangal, spicy pickled cabbage and shortrib lettuce wraps

also...we start with mariners games next home stand...
thinking a menu of
burger/fries, lemongrass pork belly sammy, pickled cabbage slaw/fries....fried spaghetti sandwich, ...poo.....a dessert ..

on wednesdays, we'll now be at cascade peoples park at 309 pontius ave in front of the cascade peoples center...

we are so excited to be working with them and helping out wherever we can..

this weeks stuff

so...

the menu for the week..

-the burger..

-an awesome thom kha soup with straw mushrooms, garlic shoots and rice

-at least for monday...the trout with fingerling potato salad, red onions, sauce gribiche

-panini with locally made culatello, provolone, arugula, chimichurri, apples good bread

-rhubarb upside down cake...creme fraiche...compote

and some other surprises throughout the week...

also...online ordering will be back up later this week...

and we are still looking for folks to join the skillet crew in anticipation of the walk up window and the second trailer..

Hey all...

so we are looking for eastside locations again..

hopefully shooting for late may as a start date...We are committing to microsoft at least 1-2 days a week, and are looking for a downtown bellevue location, a woodinville weekend location, a factoria location..

so it will be some thing like...

thurs; microsoft/redmond?

tax man

also....wanted to remind everyone that with the change in the tax rate we are having to charge tax now...we have been "eating" it so to speak...and it is an unfortunate reality that we are having to change with our economic times...

we are sorry that this has too happen and appreciate your understanding ...

we are needing to create a system in which we are able to take orders from our customers, and have it print in the trailer kitchen.... basically an 
our thought is that it would be a very cool iphone app where restaurants could potentially have a web based POS system...through iphones or PDA's.........any takers on the freelance gig?...

stuff

Hey all

 

-so...a couple of things...

we will be starting west seattle on the 26th...in the

key bank parking lot next to the farmers market.

 

-Event season is starting up and our dates are starting to book up…we will have 2 trailers this summer, so double the fun!

 

-also, with the change in the tax rate we are really forced to look at our costs. Unfortunately, We are going to have to start charging tax on our food. We aren't going to do pennies, but will round down to the next nickel. We know it is frustrating, and we have been “eating” it so to speak for the past year….but we are unable to afford that anymore….thanks for understanding…

so we are going to be serving up lunch at a new location on fridays.  We will be in the parking lot next to key arena on the corner of 1st and republican  map link
(is only .3 miles from big fish...)

additionally we are probably going to be moving away from our sunday fremont experiment and looking for a west seattle location... probably shooting for the 19th of the month

weekly musings


so the trailer is being worked on and the chassis is being rebuilt and extra supp
orts are being put into place...So with that in mind, I'd like to introduce skillet nation to Justin Geel and Parker Eberhard, the two dudes who are driving this whole process.  And are doing all the work and design...they are really good at what they do, and we are so lucky t
o have them making this all happen...
hopefully one of many they collaborate on...


They will be rebuilding the chassis this w
eek and installing the flooring and new walls...after that electrical and plumbing will go in...


additionally we were at the star chefs gala where we had won the "Best new concept" award ...was a good time and we felt good about what and how we represented skillet...

skillet weekly update

hey all..

Need a SOLU spot asap......will probably be back at alpha cine this week, as 13 coins kitchen manager called the police and SDOT on us last week, who had much better things to do and we all ended up having a good convo, ...that is crap...on a whole host of levels...however, not a problem, we'll figure it out... however needs to be a private parking spot...


Kitchen;
so the kitchen is coming along...had a walkthrough with the HD, "off the record" so they could give us tips...
we are shooting for an april 20th potential opening date...so stay tuned as it most likely will change, but hoping it won't.... the tentative hours for the walk up window will be M-F 7:30-3, and on event days at safeco and qwest. breakfast at the trailer will coincide with this date as well

This weeks menu is going to include banana cream pie, beef, fennel, roasted onion sugo with soft polenta, watermelon fresca, 3 bean chili, the burg/poo, ...should be pretty tasty...the sugo is going to be pretty rockin as we used hangar steak as the "beef" in the equation...love that cut, so much great fat going on in it....

also columbia city this saturday is looking promising...will know more on monday..

fremont...on sundays has been SLOW...so we wil give it a few more weeks and probably look elsewhere...


our condolence's to gabe and the culinary communion crew..CC closed it's doors last week...however, they are still going to rock it with their Lunch Counter on Beacon Hill...so go and support them..they gots some good stuff going on up there...

anyhoo...thats all for now...

kitchen update...


so...the kitchen is coming along...in a state of disarray...but we are hopefully about 3 weeks out...

this has led me to comment a bit on our menu/creativity lately over the past couple of months..Most of you are probably not aware that we have been bouncing around from commissary kitchen to commissary kitchen trying to patch together this business called
 skillet...it has been a challenge...

what this kitchen represents is a home for us...a place we can be more creative and really do what we are passionate about..which is cook...
we hope to have this and the walk up window open in the coming weeks, and also hope to have an "open house" for skillet nation to stop by and say hey and have a bite..
I guess,  I feel it is important to say...you haven't see the best of us yet...and we are all so excited to really show y'all what we can do and make seattle the hub of the best street food in the country..

so stay tuned to my ramblings ...and I will keep you posted...
the sign for the space goes up tomorrow morn...and hopefully the HD walk through next week...and then, we'll start slinging maple braised pork belly...bacon jam....thai cured confit of duck...and some great spring desserts...      

oh...and this is our new trailer that we are working on getting going by may 1st...stay tuned on that as well...

the first of many skillet rules

from time to time it is a good idea to share some skillet rules...
one issue that has been bugging me is comments about how people receive their food......

so here is the first of probably many skillet rules...

1.when ordering, you might receive your food before or after someone who was in line behind you or in front of you...the reason is that perhaps you ordered the burger and they ordered soup/salad...the burger takes approx 8 minutes to cook and the salad is quick...and when things are crazy, we like to get tickets done..With that being said, we won't move down the "line" more than 2-3 tickets...but don't freak if someone gets their food before you....we know you are there and will get you your food...

the week

good week....a bit bumpy...the hood went down today, and we had to shut down early

let me tell you that when that hood goes down in the trailer, it is like being in a sauna where you are grilling burgers and there is no ventilation...it is fucked up...  hopefully will be fixed monday...


had an event at town hall this eve...talk of the town...

next weeks menu will probably be something along the lines of burger, moroccan sloppy joes, watermelon jalapeno fresca, rhubarb bread pudding...etc...

so for the week some news...

-unfortunately we have to raise our burger price to $9...our grass fed beef took a jump this year in comparison to kobe. So we need to reflect that in our price...

-construction is starting on our walk up window downtown..exciting stuff...plumbing/electrical, and some painting this week...

welcome to the skillet blog

hey skillet peeps...


our first attempt at blogging...and really not much too report...
but did make a pretty large batch of bacon jam today, and am making another on monday.

Also...at the walk up window location on 4th and main, the plumber and electrician begin work this week...so we are progressing...that is great news...

am thinking morroccan lentil soup...maybe some artic char ...and something chocolate/spiced caramel...
